Missing even one banana can mean the difference between beating or failing to conquer your high score. Combining two bananas will give you a very powerful opportunity to rack up the points. For example if you combine a freeze banana with a frenzy banana you will be able to slice through a massive amount of fruit very easily in one foul swoop of your sword.
